Multiple Templates

I am trying to build a website using multiple YouJoomla templates. I am using Yousimplicity and trying to another template for sections of the website. I have tried to assign different templates to the different menu items but it still goes back to the default template. It does not matter what template I make the default, I can not add another template to other menu items.

Any ideas what I am doing wrong? I would greatly appreciate some direction in this matter. I am still pretty new to Joomla and building websites.
